Culinary Production Manager
Primary Responsibilities

A Culinary Production Manager (CPM) is responsible for overseeing the entire food and beverage operation, which encompasses culinary food production, setting of acceptability factors, customer satisfaction, field chow, Hot/Cold/Fruit/Juice support, facility cleanliness, HACCP Management, maintaining quality product and service levels while maximizing profits; forecasting and budgeting; selecting, training, leading, and developing employees.

A CPM assists with managing the annual Food Cost budget and monthly forecasts for food and beverage needs and expenses along with performing human resource functions for staff, including scheduling, evaluating, and training staff. Additionally, the CPM establishes and controls, payroll, and other operating expenses within their respective dining facility. Holding daily culinary planning meetings with staff to review past and future performance of service, food quality, and general information concerning USMC customer satisfaction and employee relations is also to be managed by the CPM.

These duties and responsibilities will be rated on the Annual Performance Review.
•\tCoordinate, train, motivate, monitor, and evaluate performance of assigned employees.
•\tSchedule and assign duties to employees.
•\tEnsure that all employees are trained in safety, sanitation, and safe use of cleaning supplies, customer service, disability awareness and sensitivity.
•\tEnsure all assigned employees attend bi-weekly safety training.
•\tEstablish and maintain high standards in food handling, serving, cleaning and sanitation.
•\tOversee all assigned operations including supervision of employees, meeting of contractual obligations and other items as necessary.
Additional Duties
•\tFollow standard operation procedures to maintain consistency of service performed.
•\tRecommend changes in service, personnel, equipment, and controls which will improve services to the customer.
•\tDevelop, lead, and train Chief Cook, Cook II and Food Preparation workers.
•\tSupervise cashiers in collecting and accounting for cash collected for meals served.
•\tEnsure employees meet GMI and Marine Corps requirements concerning appearance, personal conduct and professionalism.
•\tContinually and critically evaluate all assignees work activities as a base for developing more informative data for management decision making, increased efficiency and/or reduced cost.
•\tPerform all duties and responsibilities in a timely and efficient manner and in accordance with established company policies to achieve the overall objectives of this position.
•\tKeep immediate supervisor fully informed of all problems or unusual matters of significance promptly and take necessary corrective action where appropriate or suggest alternative courses of action.
•\tSupervise the orientation and training of food service personnel to maximize productivity and their work potential and permit promotion from within as the needs of the operation and company require.
•\tEvaluate on a continuing basis the work performance of assigned personnel as the basis for individual counseling to improve work performance or commendation where justified. Recommend transfer or dismissal of unqualified or otherwise unsatisfactory employees.
•\tEvaluate interaction between MA staff and cooking staff to promote efficient customer service.
•\tAt all times, project a favorable image of GMI to promote its aim and objectives and to foster and enhance public recognition and acceptance of the company.
•\tPerform other duties as directed.
Qualifications: Education, Experience and Certification(s)
•\tTwo years’ experience as a Project Manager or Dining Facility Manager of a similar project and three years general experience.
•\tBachelor of Science or Bachelor of Arts degree in Food Management; may be substituted for general experience.
•\tServSafe (Renew every 5 Years) Certified or similar sanitation certification.
Knowledge, Skills, and Abilities
•\tMust be thoroughly knowledgeable in the following areas: sanitation, conducting training, security, customer relations, safety and accident prevention.
•\tAbility to operate a computer using Microsoft software.
